Can't get booklet feature to work in Word for Mac

First suggestion is to update your version of Word to whatever is latest. Then retry your layout steps. And, for those steps, which version of Word was used to illustrate this layout capability? Word on WIndows? Word 2008? Word 2011? It will make a difference.

Also, Microsoft recommended Word 16.35 or later for use with High Sierra in 2017. You appear to be on Mojave, and there have been considerable Microsoft updates specific to Mojave that you have not applied. This could be a determinant factor in things not working as expected too.

Try increasing the margins in the Word file. You might have to do some adjustments. And then export and see.
