I just bought a 2020 Mac mini from apple. Under about this Mac, System Report, its says its a Macmini8,1. That's a 2018 Mac mini. Whats going on?

What "new model"? If there is one thing Apple hardly ever does, it is pre-announce new models. You want to wait until your purchase won't be obsolete in a few months? You'll be waiting forever.
In the last software update, Apple changed what it says under the system settings menu General, About. It no longer says that it is a Macmini8,1 or 2018 model.

I don't think Apple updated the firmware (or whatever) to indicate a
new model since all they did was bump the base SSD sizes. They just
upped the drive capacity, plastered new on the web page (which marketing
probably told them to do) and now new buyers are complaining they are not
getting 2020 models and getting ripped off.
