In Finder I'd like to keep "Column view" and "Group By: Date Added" options as the default view for my items, but the Column view doesn't have the "Use as Defaults" button.
What's the reason behind this, why all the view types has the option but Column view doesn't?
The support page doesn't explain that:
Is there a way to make those settings default?

In Finder, with any Finder window open and set to column view, go to View in menu bar > Show View Options. In the resulting window, tick the "always open in column view".
That should do it - I've used that for years.
If the DS_Store file is stored within the system, then you will not be able to modify it in Catalina. Extra security was added and the volume containing the OS and system is "quarantined" and read only.
No, it has nothing to do with new security stuff. DS_Store files are inside any directory that have specific view options, it's used for telling the Finder how to show a specific directory, and you can edit them if you want. Anyway, those files are not part of the main question, those files does the opposite of what I need.

I know what it does; I do not know where it (the code that activates it) is stored. If it is part of the system which resides on your Macintosh HD volume, that is now "quarantined" or read only in Catalina. So, if that is the case, you cannot change it since there are no write privileges any longer.
It might help with the view type (which is not a problem), but not for the options. The "Group By: Date Added" option for example, is not set as default, which is what the "Use as Defaults" button does.
There is still no way to set default options for "Column view" type. Those options are stored in the ".DS_Store" file in every folder, but if it's a folder you open from another program for instance, that folder doesn't have the options.
