itunes not updating

I have an iphone xr and an old tablet. on Windows they both plugin in and appear in itunes. Fine.

I have a mac Catalina 10.15.5 , the same two devices do not show up in itunes. I rebooted, and swapped ports. this cable works fine on the windows pc.

I then open the music app and it is version 1.0.5.14 - is this correct?

Confused, pretty sure its always worked, I updated catalina yet again and rebooted just yesterday. It's not a catalina issue, this was working fine last week. What obvious steps am I missing?

Oh, so the iTunes app in Catalina has now moved some options into some Finder settings? The music app is not showing my device, and no idea how to be troubleshooting in Finder , the one app I can not fathom at all, that was a brilliant move.

How do I sync files and deploy apps? Thanks in advance.

the .plist file needed deleting. What did I do wrong to break this and require a complicated hunt for a file?
