I use many signatures daily for several email accounts. Yesterday, I noticed that a less common signature was listed, but empty. By last night, all of my signatures were still listed but are empty, including my default signature.
I have updated to the latest version of Catalina and I did a safe reboot, neither of which worked.
Help! I need these signatures for my work. Any other ideas?

Based on the solution to someone else's problem, I downloaded aback up versions of these plist files and put them in my library folder. This did not fix the problem either.

I tried setting up signatures on a test user account and it works there. I also tried putting content in an old signature that is empty. That works, i.e. the new text I add to the empty old signature is displayed if I choose that signature.
I tried this solution posted to another question and it did not work (though it worked for the original poster).
Quit mail.
Finder>Go>Go to Folder, copy & Paste:
~/Library/Containers/com.apple.mail
Highlight all the contents in this folder. Place your mouse on the selection,
Then right-click and choose "New Folder with Selection”. Do not move the new folder from this current location.
You can close the Finder window.
The next step will be to restart the Mac and test
After the computer is restarted, open the Mail Preferences to see if Signatures opens properly.
All my Mail signatures have disappeared and are empty
