e-GPU on Mac mini late 2012

Will a Mac mini (late 2012) running Catalina 10.15.7 work with the most recent e-GPUs available on the market? I am afraid of MacOS and ports limitations on my current Mac Mini. I would like to upgrade my external monitors to 4K or 5K and the current Mac mini set up can't fully support them.

Later I will buy a new MacBook Pro and use the same e-GPU set up with it.

Mac mini, macOS 10.15
