Try it using the Remote after you have paired your minis. As I posted in another thread, for the AppleTV-HD there is no longer an Audio Output setting in tvOS 14.2 under Video & Audio to connect HomePod(s) as speaker(s). One has to use the Control Center on the Remote by pressing and holding the TV button until the Control Center appears on screen and selecting the AirPlay icon and then your HomePod(s). AirPlay is suitable for video and music playback. It is generally not suited for interactive apps such as games due to the lag. Most apps will allow HomePods to be selected from the AirPlay menu where appropriate.

Even with the Apple TV 4K, you cannot set HomePod Minis as the "default audio output." I hope Apple fixes it.

Yes if you have a Apple TV 4K you can set default speakers

Yes it can be done within the home app. Long press on Apple TV and go into settings then select the audio output.

This is incorrect. You cannot set Homepod Mini's as the default.
