See Archive iPhone backup in Windows - Apple Community for more on where backups are stored. The removal and reinstall instructions for iTunes don't touch the area where these backups are stored, nor the area where iTunes records its preferences. Have you previously backed up any iOS devices to this computer? Have you used any third party software removal tool? Do you see any backup folders in the given location? If so it might be possible to make a new backup, and trick iTunes into using the old one if needed by renaming folders.

It would seem an uninstall and reinstall is required, though I thought you'd just done that. There is no guarantee that having done so iTunes will see that previous backup. Impossible to tell if it has just been forgotten about, or if it is being ignored because iTunes knows there is a problem with it. I suggest you make a security copy of the folder elsewhere, then backup the current state of your iPhone. Check that a backup is now listed under Edit > Preferences > Devices. Close iTunes, rename the new folder by adding say NEW to the end of the folder name, then copy the rest of the folder name and apply that to the old folder. Launch iTunes and see if it now shows the old backup, and if so you are able to restore that backup to your device.

I'm afraid I don't have any solution for that. There are third parties that claim to be able to repair backups or extract data from them but I have no experience of them or recommendations for you.

When you say backups do you see more than one listed? If so have you tried them all?

If the backup is seen as corrupt there isn't much you can do about it. Backups are forward compatible, i.e. a backup of an iOS 12 device can be restored to an iOS 14 device.
