Bluetooth audio issues - Robotic voice

Every once in a while my Bluetooth headphones (with mic) start sounding with a robot voice to the other end... this happens while using my Macbook Air with several bluetooth headsets (like Bose QC 35 II and Apple Airpods), all of them which works great with other devices so it's not their problem.

I already updated both Mac and Airpods, re-pair them, and followed the steps here (https://support.apple.com/en-us/HT208896), without any luck. The only solution (albeit temporary) is rebooting the Mac.

As you can imagine I find this behaviour unacceptable as I use my Mac for work videoconferences and I can't reboot it every time it starts sounding like a robot (which I can't know in advance, just when others in a call tell me).
