Under the “repeat” menu, all I see are options for the particular days of the week. There are no “daily” or “weekday” options. How do I set an alarm to go off every day without setting 7 separate alarms—one for each day of the week?

You dont. You have to elect every day that you want the alarm to sound and when you go back to the first page of the alarm it will indicative daily and be one alarm not 7.
