Issues installing MacOS Catalina Supplemental update 10.15.7

MacOS Catalina Supplemental update 10.15.7 wouldn't complete installation, whether it'd be done thru Software update or via offline install. It restarts the machine but takes it to screen with an error as shown in attached image and then it asks for restart only. That navigates to Startup disk choice screen where I'd have to pick up MacintoshHD to boot it BAU and get to the desktop that way, without having any updates applied.

Can you please help?

Thanks Calvin_BT. I tried Mac Recovery --> Disk Utility.

There, I got to see the disk volumes being available (although greyed-out) but their type was already showing as APFS. Would I still need to change anything here?

Figuring I couldn't do much then I ran the First Aid on all volumes, including my external drive (Toshiba) and this is how it appear to begin as below.

Rebooted the MacBook but then held off to install the updates again and thought to consult here before proceeding further (Im not too much a Troubleshooting guy)

Also, in addition to this update problem, Im having another Time Machine backups issues. Those are halted since 2/28/21 for they assume FileVault is constantly at work on Encrypting and/or decrypting Macintosh HD (whereas it doesn't seem like it when you check under System Preferences) - This is a whole another can of worm Im looking to find a solution for on the side.

Seems the installer had a fatal error to install macOS

the bold letter says

macOS could not be installed on your computer

And the log on the installer says This Mac can only install macOS on APFS-formatted drives. Please use Disk Utility to reformat as APFS.

Quit the installer to restart your computer and try again

Try restarting it and what does it happen?

The error code is 108.

As @ Calvin_BT has outlined - the Internal Drive is formatted incorrectly as HFS Journaled. Starting the Catalina and above, the internal drive must be formatted in the New apple APFS format.

Suggest making a Time Machine Backup now and if possible a Tested Clone to external Drive. This will be the insurance for the next step. That is to Use the Tested Clone to boot to it and use Disk Utilities on the Clone to Reformat the Internal Drive to APFS and GUID. Understand - this will Wipe everything from the Internal Drive and can not be recovered. Once that is done, you can Clone from Bootable Clone Drive back to the Internal Drive. Then apply the Catalina Supplemental
