How do I type a hashtag symbol on a UK MacBook?
All the forums are saying Alt+3 but this doesn't seem to be working for me?

Can you please try Shift + 3 and see ? For me Alt/option gives me " £ " and Shift +3 gives " # ".

Go to system preferences > keyboard > input sources and make sure there is only ONE item on the list, and that the name of that item is "British". Then your output should match what is printed on the keys, and # should be at Alt/Option 3.
Unless you got some other country keyboard on your MacBook....
There may be a way to see the keyboard effects by using the
menu bar "Show Keyboard Viewer" or such similar item when
that is visible by the date/time, if activated in your macOS.. (or)
