watchOS 7.5 Update has taken 5 hours so far

This morning I was notified I needed to update my Series 2 Apple Watch to OS7.5. I had to unpair from my iPhone. I have since followed all instructions, the Software Update on my iphone says Preparing ... at one point it said Installing (or similar) this may take up to 2 hours. When I checked back it had got down to 57 minutes then went back to saying Preparing ...

Am I going around in circles?

My watch is on its charger and in range of the iphone and wifi as instructed.

Does my phone have to be on the Software Update screen the whole time? Because, I do want to use it for other things? Should it all be taking this long? Thanks.

After full reset, re-pair, it told me I needed to update. I ignored and allowed it to set up from backup. It is now working again and I checked and it has updated 7.5. So over 7 hours after starting, all is now OK.

Now phone is telling me to put on watch and pair it. Watch is still saying "Please continue setup on iPhone". Nothing else if I tap it or press any buttons. So I've had to reset to factory defaults - no other option :-(.

I've had to keep my phone sitting on my desk for 5 hours already and I'm missing calls when I have to step away. This is very frustrating. It is not like they would give you any money to upgrade to the latest model either... wonder how long the latest watch takes?

My update is stuck in an endless loop. It won't let me skip the "Install Update". The update runs for about 3-4 hours, goes through it's entire cycle and starts over. No amount of pairing/re-pairing resolves it. Clicking yes for this SW update was a huge mistake. Any ideas welcome!
