After updating to iOS 15 WiFi is working but internet will not connect. We have another exact same iPad Pro and it is connecting to the internet so it is not a WiFi problem.

Your issue is unlikely to be WiFi per-se, but more likely a problem obtaining a valid IP Address for your network.
If you have a VPN App or profiles installed, or a security App such as Norton, these may be interfering with DHCP - and may need to be temporarily disabled.
DHCP is frequently used to automatically obtain an IP Address from your WiFi Router. Until your iPad has a valid IP Address to connect to your network, you will not have an internet connection. Disabling or removing VPN and/or the offending security App should allow DHCP to operate normally - allowing connection to your network and the internet.
If this resolves your issue, the VPN and/or security App can be reinstated after the connectivity problem has been resolved.
I have the same issue with my iPad air 2. It worked fine with Ethernet cable until I updated it yesterday. I tried to enter the information manually (as it shows when connecting my iPhone XS), but it still doesn't work. Must be the iOS 15. :( So don't update, until they fix the problem (if they ever will).
Yep it's really frustrating. This in my view is a major bug, and it is known to Apple (I reported it weeks ago).
I guess wired Ethernet functionality isn't part of their regression testing for major releases, which is a shame as wired connections are used by professionals in various industries for reliable and fast data transmission.
I've sourced an older iPad with 14.x installed, Ethernet works fine as you would expect. But that's one less new iPad sale for Apple.
Still no fix for this.. iPad 6th gen was working fine on 14.8. Updated to Latest 15.1 and now Wifi is broken. Reset entire iPad and issue persists. Takes forever to join Wifi, and if it does, internet will drop and status says no internet even though it's got a valid IP config. 2 iphones, a Macbook and a Windows laptop all tested fine. iOS 15 definitely messed up the modem/wifi defaults from 14.
My wife's iPad - 7th Gen - has not been able to connect as it used to here at home after moving to 15. I took it elsewhere - former workplace - it it connected without issue. No VPN, nothing added to iPad since owned. I tried the suggestions offered here to no avail. Info shows iOS as 15.0. Has there been a fix issued? If not, I will move it back to the previous os. Thanks for any help that can be offered.

Remove the VPN/Security App from your iPad - then restart the iPad. This should clean-up the network stack.
After restarting your iPad, you can reinstall the VPN/Security App, after which all should be well.
The VPN was the issue. Once I disconnected it I was able to text from my iPad again. I also have better WiFi connection.
I have been researching this since I downloaded the 15.2 and lost my iPad messaging and WiFi .

Very strange but on one iPad there was not a problem but on the other identical iPad temporarily disabling Web Protection in Norton solved the problem.
I had the same issue on my iPad (8th Gen). As soon as I turned off Norton Web protection, my internet came back. I hope this bug is being worked on.
Get rid of Norton Web protection off of your iPad. iOS/iPadOS devices DO NOT need this!
Try disable Bluetooth and see if Wi-Fi works again!

I tried 'forgetting' the network and then reconnecting which fixed the issue. Didn't think of that. Next time I'll know.
