I recently updated my iMac to Safari 15. Up to this update I was able to keep my Favourites in the SideBar extended permanently to show all my favourites. With this update I now have to click Bookmarks in the side bar or under View select Show Favourites Bar, but it does not "hold" permanently.
Can anyone advise?

Apple Support just figured this out for me. In Preferences -> General, "Safari opens with:" was set to "A New Window". We changed it to "All windows from last session". Now if I close Safari and re-open it, the sidebar comes back just the way I left it. I don't know if it matters but "New windows open with:" is set to "Same Page".
I am starting to wonder what Apple is up to with this "problem"? Seems like it would be fixed already unless they don't want it fixed. Am I missing a reason that they want to shove the tabs down our throats instead of letting us use our favorites?
It’s an absolute pain in the rear, between this and now my screen capture playing up where the main preview of the screenshot not disappearing after saving it to photos is both making the workload harder especially for studying my online uni degree, it’s at a stage where I can’t recommend iMac for studying to fellow students any longer.
This has been a problem since I updated six months ago. Why isn't it being fixed? Having to click on Bookmarks every time to expand your Favorites when you have your sidebar hidden is ridiculous. DO SOMETHING APPLE!!!
But I just discovered if I close the sidebar and re-open it by clicking the icon at the top of the page, it comes back collapsed. Haven't found a combination of options to fix this yet.
I will post something to Apple and see what I get back. Really can't understand the rational behind this change
This worked for me using Safari in Catalina 10.15.7
No more problems
I submitted a Product Feedback as well.
Safari -> View -> Show Bookmarks Sidebar.
Then Bookmarks icon wil show up.

Sadly that does not work for me. It will show sidebar first time around but if I Close rather than Quit the sidebar disappear again. I suspect old Bill is right in his post

That's really strange, also tested here on & MacBook Pro 15” (macOS Big Sur) - late 2013.
I just did the update for Big Sur 11.6 and I have the same issue. I've tried all the suggestions given so far and nothing has helped. Bookmarks are all minimized when I open Safari.
I too have same problem on both my MacBook and my 21" iMac and it's VERY annoying - Is Apple paying any attention to this??
