iPhone backup to Mac

MacOS 11.8 Big Sur on MacBook Air

ios15 on iPhone XS


Trying to back up my iPhone to my MacBook. When I plug the phone in via lightning and USB and start Finder, I click on the iPhone location and I get a window that says “Welcome to your new iPhone “ and it gives me only an iPhone set-up or restore option, no backup, no "general” or other menus.

My wife’s iPhone 11 does the same thing with her phone and MacBook Pro.

Can anybody tell me what I’m doing wrong and how to fix this?
