Ever since my Apple Watch 6 upgraded to watchOS 8.0.1, I have noticed this bug. I have an "analog" watch face. What happens is that, when I glance at my watch, the minute hand is momentarily where it was the last time I checked the time. Then it "jumps" to the correct position.
Anyone else see this?

You can try rebooting your Watch.
Press the Digital Crown and the Side Button together until you see the logo.
According to this Apple Support link -https://support.apple.com/en-us/HT210428, the time updates every minute when one's wrist is down. My watch doesn't update even after fifteen minutes, until my wrist is raised again.

Always on deactivate the second hand until you raise to read.
That could be, but I have never seen this behavior on my Watch until I installed 8.0.1!
I'm also talking about the minute hand, not the second hand!
