I've updated my Macbook Pro yesterday and since then my new Bluetooth headphones Soundcore Life Q30 are stuttering. I've never had any issues with these headphones before. Do you know why is this happening and how to fix it?

Turning off AirPlay Receiver worked for me. In addition, often after my computer is powered down I have to go into Bluetooth Preferences and take my headphones off the list (x button) and then let it reconnect. Between the two this covers it for now.

From your post it appears you are having an issue with your Bluetooth headphones.
We would recommend going through the information outlined here to make sure there is no interference issues: Resolve Wi-Fi and Bluetooth issues caused by wireless interference - Apple Support
You may also want to check with the headphone manufacturer to see if there is any firmware update required with the new macOS.

I believe I figured what happens now, seems like macOS sets sample rate to 48khz for the headsets sometimes of some reason, it always happen when I use remoting software such as jumpdesktop which only supports 48khz.
(This can be seen in audio & midi devices)
the problem is there is no way to change it back to 44.1khz but to re-pair the headset.
seems like mixing isn’t working propely on monterey.
I am experiencing the same issue with my WH-1000XM3. I already turned off the airplay receiver, deleted the bluetooth module, turned off hardware acceleration on chrome browser. Neither of them works.
Not only the audio is lagging. The mic becomes unusable and stutter as well during GVC with colleagues.
Please help fix the issue. This is terrible experience.
