My iPhone is disabled, when i connected to iTunes and tried updating, it is showing "To update your iPhone to iOS 15.1, you need to install the latest version of iTunes."

"Latest version" is Apple-speak for the latest version that your version of Windows can use, which isn't the same thing as "the latest version". So which version of Windows do you have?
As Johnny DEP has mentioned, to install the latest version of iTunes, so that you can install iOS 15.1 on your device, you need Windows 10 or 11.
It's as I said, Apple has a strange way of wording some of their messages, which can lead to confusion.
Windows 7 and 8.1 are no longer supported by Apple, so you cannot “install the latest version of iTunes” as instructed by the message. You need to be running Windows 10 or 11.
