Can I delete the contents of my safari mail without deleting content of my gmail account?

Safari is a web browser, so if you are logging on to your email account from there, any content deleted will be removed from any associated devices. If you are using the Mail app on your Mac, the same concept will apply, since the Mail app is an email client, and pulling information from your email provider directly.
