After update to iPadOS 16.1 I noticed some visible lag when writing on iPad, notes app. Sometimes, the object erase is also not responding but pixel eraser works. Tried, restarting iPad, re-pairing Apple Pencil to no avail.
This didn't happen before I update my M1 iPad Pro 11inch.

Listen, I've found a (temporary) fix to this problem.
Issue :
The issue occur for me since IOS 16.X
Apple note get very very and very laggy when using the Apple Pencil explicitly on the Apple Note app after a short while on the same note.
Also, the iPad get hot and battery drains quickly
The issue occur with new notes that have been created when running IOS 16 and/or if new tools
SOLUTION : This is what you can do to bypass the issue :

Tips : What I've done is I've then duplicated "that old note" x9999 times, created a folder, moved all those non-glitchy note to this newly created folder.
So then, when I want to handwrite, instead of creating a new note, I navigate to this folder, and I "move" one of the notes to the folder of my choice.

It completely ruins the functionality of the Apple Pencil combined with Notes which worked so smooth before…

Same here. It starts ok, with no lag, but then the lagging increases to the point I have to stop taking notes.
I also noticed that my iPad Pro gets REALLY hot when the lagging becomes bad.
I can confirm this. I opened a new note, and there was absolutely no lag. I went back to my existing note and the lag resumed.
I can confirm as well. The lag I was experiencing was caused by adding to one existing note in particular, even after I "Erased All Content and Settings".
Well, I take it all back. It didn’t take long to all go to garbage again. Tried removing the app a d reinstalling again. It worked for a short time but it’s all crap. Apple needs to fix this immediately. My pencil is garbage until they do.
I’m having the same issue. Nothing has worked followed every Apple Support suggestions.

I have an iPad Pro 12.9’’ M1
I even lost some parts of the notes taken. I guess the isssue may be with the notes app itself.
The problem persists, I even turned off the iPad then back on, and for some minutes the lag dissapeared but then came back again.
This is a big issue, as the notes app suddenly became useless.

Tried what it described above and the problem persists. Restarting the iPad still does not help. This have been preventing me from using the iPad

To add to the voices, seeing the same issue.
There is a severe lag when using Apple Pencil in iPadOS 16.1.1. Issue has started since iPadOS 16.1. Notes is almost unusable at times.
Updated to 16.2. Still have the issue..
