Give this a try: boot into Safe Mode according to How to use safe mode on your Mac and test to see if the problem persists. Reboot normally and test again.
NOTE 1: Safe Mode boot can take up to 3 - 5 minutes as it's doing the following;
• Verifies your startup disk and attempts to repair directory issues, if needed
• Loads only required kernel extensions (prevents 3rd party kernel/extensions from loading)
• Prevents Startup Items and Login Items from opening automatically
• Disables user-installed fonts
• Deletes font caches, kernel cache, and other system cache files
NOTE 2: if you have a wireless keyboard with rechargeable batteries connect it with its charging cable before booting into Safe Mode. This makes it act as a wired keyboard as will insure a successful boot into Safe Mode.

I have had problems with Lightroom Classic crashing with Ventura when I changing print settings (reported here https://community.adobe.com/t5/lightroom-classic-bugs/p-print-module-page-set-up-crashes-lightroom-classic-v-12-0-1/idi-p/13326937). Started back in November 2022 and in my case went away when I completely deleted and re-installed printer drivers. (Others had to wait till the most recent Ventura update - almost 6 months!!).
But when the crashing stopped it appeared my saved print settings for different papers had gone too.
Since then I have experienced issues described here: in LR Classic settings for media and quality revert to default however many times you save them. The custom presets for e.g. printing on glossy paper are all listed but when I choose them they turn out to be default settings ('plain paper' every time). I downloaded a trial version of dedicated printing software in the hope that would provide a way out, but the problem is the same, or even worse (it looks as if the settings are not even saved for the specific job in hand). So it must be an Apple issue.
The funny thing is: someone mentioned they could create presets using the program Preview, which apparently shows different behaviour.I realized that in my case too only Preview gives me a list of standard Epson printer presets (glossy paper, archival matte etc) that should always be there. These standard options I don't get to see in Lightroom. And indeed, when I saved a preset in Preview it showed up as stable preset in LR. It makes no sense but isuseful as a workaround.
For these simple prints I don't use ICC profiles so I have no experience to share with this aspect.

I'm a professional printer and photographer, and I've seen (and privately ranted) about this problem for a while; it continues to be a problem in Sonoma. However, I have had luck with the following procedure:
I'm unsure why this happens, but my hunch is that Photoshop needs the two-step process to update the override of Sonoma's control. It is a pain, but it seems to be successful. Cheers!
It looks like the problem is with the Paper Handling option, that saving that as part of the preset is the part that's not working. Saving the "Media Type" with vendor drivers worked when I tried it.
Is there a reason you are using Paper Handling and not the Paper menu above? The setting of the paper menu is saved as part of the preset, but that may not get you what you want.

Following up on my post from earlier today, I have come up with a workaround. If I define my print presets in Preview instead of in Photoshop, the settings are properly recorded. I can then successfully use those presets to print from Photoshop, as long as I don't change any settings from the values in the preset.
As for saving presets I have now investigated furter what I can do using the Preview app. When I choose the printer I can access the ICC profiles under the 'color management' settings, selecting color sync and an ICC profile. There are a number of profiles linked to the printer's manufacturer (in my case all Epson papers) but it looks as if you can click furter to access all ICC profiles that you use.
I selected an Epson profile, glossy paper and paper size (including the right feeding tray and borderless), and saved this as 'print job preset'.
(I'm still not sure what the difference is with custom preset but an explanation I found says " Custom presets can be used in conjunction with print job presets to fine-tune the settings for a particular print job."https://www.hawkdive.com/how-to-fix-ventura-not-saving-printing-presets/)
I then opened the printing module in Lightroom, the preset was there, and selecting it indeed gave me the right settings. It still reverts to default after one printing job but at least you can change all settings by just choosing the preset.
I also noticed that although when defining the preset in Preview I chose a paper size, that was overruled by the print settings defined in my templates. So that works okay.
I could also in LR print module define the printing settings for an existing template for Epson printer and Epson paper (so that the right type and size of paper is chosen when selecting the template; button 'print settings' bottom left). I could also save this to the template (right-click on template: adapt template wit present settings). So far so good.
The Epson profiles are readily available, at the bottom of the list there is a choice 'other profiles'. When I tried to update another template and selected one of these 'other profiles' LR crashed. Four times, no coincidence.
Choosing this profile in Preview seemed to work. But when I selected this saved preset in LR the profile had reverted to an Epson profile (not similar, but completely wrong). When I tried changing it in the existing preset LR crashed.
So I can create presets for the combination Epson printer - Epson profiles, but I cannot save presets with other profiles. And I do not use Epson papers.
This is a different issue than the Paper Handling issue above - that affects all printers, AirPrint and vendor. This is likely the known issue with saving the paper tray setting with vendor drivers. There isn't a workaround for saving that setting.

Color Sync issue causes double profiling
PS 24.1.1 / Ventura 13.2.1 (22D68) / Apple M1 Ultra 128 GB
In the print dialogue, under Printer Options / Color Matching the Color Sync setting is grayed out. In the following, the Default shows the radio button set to Color Sync as it should since PS will provide the ICC profile. The setting is copied to a new preset "Han Luster Sheet". When viewed, the new preset is no longer set to Color Sync, but to Epson Color Controls. This results in double profiling with colors grossly off. Since this dialog box is grayed out, it cannot be set back to Color Sync.
This is still occurring having deleted the printer in MacOS and via Epson's Uninstall, and then reinstalling.
Printer driver is Epson 12.62 (current for Ventura) for P7000. Same behavior after a complete print system reset.
As I was working with other vendors who have printing systems that operate outside of the Adobe environment, it seems there is a general failure to "remember" various preset settings (including sheet or roll paper):
...there are some bugs in the Apple print system in Ventura which can cause driver settings not to be remembered. This issue is not specific to [product name] but is a bug at the system level.
Mac OS previous to Ventura, such as Catalina and Monterey work fine for printing with working ColorSync/ICC management with Adobe CC apps like Lightroom CC and Photoshop CC. Ventura definitely breaks ICC pruning from Lightroom, which no linger works as it used to, though I got Photoshop to sort of work properly (but with having to set printer options manually for every print). The Lightroom ICC issue seems to be a separate issue to the Print Presets issue, but perhaps just reflects a different aspect of buggy code underneath the print dialog in Ventura.
For theaudiodoc, I would recommend backing up and reinstalling Big Sur or Monterey Mac OS. PITA, sure. But, it will be less painful in the long run than putting up with the broken printing from Ventura.

The settings in the Apple module won't stick no matter what! Using the Qimage One app, you set everything in Qimage, printer name, media type, paper size feed type and paper ICC profile, when you have the exclamation point in the print settings box, you go once to the apple print module and make your settings and then you get the green check mark in the printer settings box. Qimage support told me not go and look at them again, they won't have stuck. In any case I'm now getting good prints on my old R1900. Before, from LR Classic or On1 Photo Raw, they looked like they were double profiled or the incorrect profile.

do still have an issue with any paper that requires the rear feed on my printer. I have not been able to print on any heavier fine art type papers.
I'm not an expert at any of this. Still have a lot to learn. But I've read that you should make sure you are using drivers from your printer manufacture and not Apple drivers. If you are using Epson papers make sure you download and install the driver with ICC profiles and install that. In my case, somehow I managed to have only the driver installed. I downloaded the ICC profiles separately and most of them wouldn't install in Ventura because they were 32 bit and Ventura is 64 bit only. I reset my printers and started over with Epson drivers installing the photo printer first and then my Epson WF3640 which I use for document printing and scanning.
Anyway as I think I mentioned, I've migrated from MS Windows 10 where I never had any of these issues with printing photos. Its really quite shocking that this is even possible with Apple! I expected better!
Of course IMO Epson is not blameless in all of this. At the very least they should be working with Apple to get all of this fixed. In my case, with an old printer like The R1900 I don't think they care. I'm sure they'd like me to buy a new printer. One thing is for sure. I'll be more careful about installing Mac OS updates. I should have learned my lesson with updates to Windows 10 -- invariably something didn't work after Windows updates.
FWIW, I understand there were some bugs with ICC profile up to a point with Big Sur, which is what my MacBook Pro and Mac Mini M1 came with. I regret updating, but honestly, I had not yet made any photo prints with my R1900 at that point, so I don't know anything about how the print module worked, other what others are reporting.

This discussion was an eye-opener for me in that it pointed out where you should choose which settings. The printer interface now invites you to choose settings which you should not choose because Lightroom or Photoshop handles those aspects. You can save your preferred settings (for paper type and size) when you tie them to a print template in Lightroom (if you use that). To help you choose your settings in the right place Geoff has described the procedure in detail, and I think it makes sense. (The print interface does not, of course, that's why we ended up here.)
Ventura Print dialog does not save critical settings to Presets. This is a huge issue for photographers like me. Print presets must save Color mode, ICC paper profile, Paper type, Print Resolution/ Print Quality, and other features, but it saves NONE of these consistently. This makes top quality photo printing using Mac OS Ventura impossible.
I was also having this problem, too. I went out to my Brave browser, changed the printed and saved the settings in Brave. Now they're showing up properly in my graphics program. I don't know what all programs this workaround might work on, but it's simple enough to try.
