Give this a try: boot into Safe Mode according to How to use safe mode on your Mac and test to see if the problem persists. Reboot normally and test again.
NOTE 1: Safe Mode boot can take up to 3 - 5 minutes as it's doing the following;
• Verifies your startup disk and attempts to repair directory issues, if needed
• Loads only required kernel extensions (prevents 3rd party kernel/extensions from loading)
• Prevents Startup Items and Login Items from opening automatically
• Disables user-installed fonts
• Deletes font caches, kernel cache, and other system cache files
NOTE 2: if you have a wireless keyboard with rechargeable batteries connect it with its charging cable before booting into Safe Mode. This makes it act as a wired keyboard as will insure a successful boot into Safe Mode.
I found a message in my Spambox from Apple Communities: that they had removed the reply you only received in the mail because "it contained rants or complaints that weren’t constructive." I suspect this is done by the system trained to do a crude sanitizing job - that a human Apple eye is reading this thread is unlikely, given the silence on these issues on Apple's part. [this reply the system will probably also consider to be lacking constructivity :-) ]

This very interesting. Even though I went through the procedure a few times, it never worked exactly the same as it did for you. Mainly the color matching is not greyed out and is switchable. Everything else sets up fine. Interesting I am also using Moab Entrada Rag 300 Bright using the rear feed (manual-roll) with my Epson R1900. The media type watercolor radiant white is now Not greyed out. With Qimage One, and with On1 Photo Raw, under fine art paper, watercolor radiant white and the other selections are greyed out. I haven't tried printing with these setting yet.
Again as odd as it seems, printing is working correctly over on m Windows PC. So the Epson driver in that case is playing nicely with Windows. But I really don't want to have to boot Windows. I want printing to work correctly on my Mac Mini M1.
I'm having the same problem on my new Epson SC 9000 in LR Classic. The print dialog box keeps defaulting to Epson Premium Luster even though I'm setting it to Velvet Fine Art paper. I've tried multiple ways to save a preset with no luck. Settings also default to 8 bit setting when I've set it to 16 bit.
I did just send the problem to apple via feedback assistant.
Has there been any update ob this issue??? I've just got a new iMac ( Ventura ) and was printing with the old iMac and big Sur I believe and had no problems. for what ever reason I have no access to a print dialog box of colour management system. when trying to print from
LR PS OR pro print layout ( Canon image program 1000) the colours are off meaning the way that driver and printer are communicating ain't talking correctly. Does anyone have a work around and or solution??

All I want to do is save settings as a preset. When I print and set each setting by hand, I can print beautifully on the Epson 8550. But...
I go to settings and change these: Rear paper feeder, Glossy Photo paper, etc.
Select my preset:
Select Save Current Settings as preset:
Name it:
Prints normally.
Next print:
Go to settings, and check the "Print Settings" button.
It has reverted to the old settings:
Print settings do not retain changes, even when you press "save" and name it.
Conclusion: Print dialog does not retain saved presets.
Safe mode did nothing. This setting doesn't save while in the same document.
So if I print, and go through all of the baloney like changing paper size, and changing paper trays, and changing paper type, it wont even save the settings from print to print. So every time I go to print, I have to go through ALL of those steps.
The presets do not save.
Can you provide specifics?
There are known issues with duplex and Paper feed using vendor drivers.

I am having the same types of issues as other users in this thread are reporting. I am using Ventura 13.2.1. I am printing from Photoshop 2023 to an Epson P5000. This is a huge pain.
I've just installed the new update to Ventura 13.3.
Extraordinarily, the Paper Feed issue has STILL not been fixed.
It's disturbing that Apple has support employees who are not trained on the very significant changes in the print dialog under MacOS Ventura. It's completely different from recent Mac OS.

Sadly, Preview suggestion doesn't work for me - even Preview itself still doesn't retain Paper Feed choice.
Since I still had a bootable install file of Monterey (V12.6.3), I created a working version on an old hard drive. If you have room on your system's drive, it could be done there. I then downloaded the current Photoshop (V24.1.1) and installed it on the same HDD. I made sure I had access to the files on Ventura so I could access PS actions that I might need as well as display and printer profiles.
Now I'm able to boot into Monterey, start PS, and pull my image files and print them successfully using the old print dialogue that works.
