I use screen time to set limits on the usage of games and social apps for the kids, but the feature routinely gets reset or disabled.
Suspecting the kids hacked it, I have changed the password repeatedly. The new password they have never seen, they have never been near me, and I have not written it down.

I am guessing some iCloud sync fail safe mode is clearing the settings

THIS IS STILL HAPPENING! I've been checking every forum and post for a year now, it is completely ridiculous. I have called in in the past, and it's been a complete waste of time. Every tip or trick to fix it works very temporarily or not at all. DO BETTER, APPLE. I have been an Apple customer for almost 20 years, and I am seriously considering switching to a company that has parental controls that actually work. These pages and pages of unanswered posts show that you really do not care about the things that are important to your customers.
I opened another case and I asked where to report a bug from user to apple.

This happens everyday seemingly overnight too. I just can’t fathom it. My kid deff does not know passcode and does not know the “trick”. Phone down time doesn’t reset. Just app limits
I saw somewhere to try signing out of your iTunes/Apple ID account and sign back in. This seems to have fixed my problem with it cutting off my app time limits I have set for my kid.
For me it lasted for 3 days, then it started again to reset the setting...

Can you tell me what “signing out of iTunes and back in” means? AppleID? I don’t have iTunes in my iPhone.

It's April and no fixes yet? This is completely unacceptable on Apple's part.
We had the same issue, solution was to update every device to the latest ios.
On the iPhone, if you press it in one place, it works in another place

im having this issue as well. Every night at midnight it resets itself. How is this happening with a company that’s worth 3 trillion???? Seriously wtf
