My brand new Apple TV 4K was working perfectly. With the latest update, anytime content is Dolby Atmos, we lose sound. Nothing has been changed in connection since initial setup. It’s connected to an LG Oled and LG S95QR soundbar.

Unplug the Apple TV from its power source for 2-3 minutes and then plug in and retest. Failing that, you may have a networking issue where the ATV is located. Run a tool such as iStumbler to measure your Wi-Fi signal where the ATV is located to test your signal strength.
I have almost the same problem. ATV Connect to an AV-Receiver. After stop/restart of a multi channel stream like Netflix or Amazon Prime only the front speakers are active. No other speaker is running. AV-Receiver still shows Dolby Atmos, but no other speaker is active. No dialog, no surround, nothing. After restart may it be cold or warm the multi channel sound works again
