Long time Apple TV user. I just bought a new Apple TV to support a new TV and...
...The speech button doesn't let me fill in fields via voice anymore? It just goes to Siri or general search now, which is never useful.
What's the right button?
Siri (commands and questions) availability depends on the country and interface language setting, and Siri setting if the former conditions are met. Use Siri on your Apple TV - Apple Support

I use the Siri button within search 🔍in some Apps. Otherwise press and hold the tv button to bring up control Centre for search
