CarPlay not working after iOS 16.5 Update
after upgrading my iPhone Pro Max from 16.4.1 to 16.5 my Carplay does not work. I cannot download back to 16.4.1, will 16.6.1 restore carplay?

The problem here can be in the infotainment system, or in the iPhone, or in iOS, or in the connection, among other possibilities.
If you have used a cable to connect to the infotainment system here and not Bluetooth, you will have already replaced that and ruled it out as an issue.
If not the cable, the next step is to check for infotainment system firmware updates, and for iOS updates. This usually resolves the known issues that can arise with the two immensely complicated computers operating on each end of the connection—the infotainment system, and your iPhone.
If the problems persist, contact the car manufacturer, as they are best positioned to troubleshoot this. If the problem is with iOS, the car manufacturer is best positioned to work directly with Apple to resolve this, or (potentially) to make changes to the infotainment system to work around the issues.
Even if this is an issue with the iPhone and iOS, it’s not an endemic issue with CarPlay. And if this is iOS at fault and not some oddity specific to the manufacturer’s infotainment system, it’s something that will necessarily involve both the infotainment system maintainers and Apple CarPlay maintainers to resolve, and possibly other parts of both organizations.
Could this issue be caused by the iOS update? Sure. But is the flaw in the Apple code, or in the infotainment firmware, or has (for instance) some Bluetooth giblet on either end of the connection that picked this moment to fail?
In short… Contact the infotainment system vendor. That’s usually here vehicle manufacturer. They’re best positioned to resolve this directly m or to work with Apple to resolve this. They’re also best positioned to know if and where there are issues with CarPlay; whether those are nascent, already acknowledged via TSB, or otherwise.
As this is a user to user only forum, Apple won't see your hope here.

Before you do however, try an authentic Apple Cable between your car and iPhone. I've read elsewhere, using an authentic Apple Cable solved this for someone else with a Toyota.
As stated earlier, This cannot be something the carmanufacturer(s) need to solve. This is an apple thing. How do I know? Well I bought a refurbished XR and this phone upgraded to IOS 16.6 Now suddenly my car (throught carplay) states that I need to Activate Siri ( which i do not want or need) and after that carplay worked normally again !!
I havent tried to update the iphone 8 to 16.6 to see if my hypothesis is true..
16.6 worked for me
I was able to reconnect my iPhone 14 Pro Max to by BMW’s Bluetooth after I preformed a hard reset to my vehicle’s radio. Now, my CarPlay is working.
You need to do a hard re-start if your radio unit.
It still has issues at times. Make sure to connect when car is in park otherwise it won’t connect. If it comes unplugged for any reason while driving you have to stop and put into park to reconnect- never did that before. 🤷♀️
They won't respond to you. But someone at Apple will read it. The thing about CarPlay is there are SO many variables, when dealing with different car brands and the infotainment systems in different cars. It's not possible for Apple to resolve all CarPlay issues, as Apple didn't design the Infotainment systems in any cars. When you have an issue, its often best to contact the manufacturer of your car, which may be aware of an issue and even have a system update for your car.

Sorry, but you are completely wrong. App Developers (in this case Mercedes) are provided the API for all iOS updates before they are released and they are responsible for ensuring their app works compatibly with the new iOS. Why do you think your apps get updated en masse before an iOS update? It’s because Apple provided the API for the new iOS before it is released, so they can ensure their app works with the update correctly.
So if CarPlay isn’t working, you should contact Mercedes for help. Or don’t and you can be frustrated.
It started after an Apple update, not before. As a troubleshooting methodology, great suggestion for others, but unfortunately I’ve already done the unpairing from both devices that (first about 2 months ago when it first started) without any change. Coincidently, my daughter has a 13 Pro Max that received the same update and it broke CarPlay for her as well in both my Ford and in her 2022 Nissan. This isn’t on the automobile manufacturer; this is an Apple Software oopsie, that likely slipped through quality control checks. If I weren’t in the Technology field and specifically the software dev field, I might be more apt to believe Apple software is without bugs that need fixes.
Apple does not support downgrading to a lower version once you have already updated. Furthermore, there is no iOS 16.6.1.

Whether it's iOS or not isnt necessarily the issue. Honda is the one who made the infotainment system in your car and Honda needs to ensure it works with iOS. Perhaps Apple changed something. They provided the API to Honda in advance of an update. And Honda is the only one who can update their infotainment system in a Honda car. Apple has no control over Honda software at all.

Siri is a fundamental part of CarPlay, and is also always part of Bluetooth connectivity, and very commonly has a driver-accessible control to summon Siri. Beyond the one button to summon Siri, the CarPlay interface is available entirely hands-free.
Yes, even on iPhone 8. My iPhone 6s was working fine with Siri and a Bluetooth infotainment system—not even CarPlay—in a ~decade-old truck.
For details of the particular infotainment system, check the owner’s manual. For many vehicles, there’s a voice command button on the steering wheel. This button for various Bluetooth infotainment systems, and for CarPlay support. (I suspect it’s even required for CarPlay support, but don’t have access to the CarPlay specs.)
