I can't reply as they're locked, so I'm starting a new post to share my insight.

I've figured out how to highlight across multiple pages!

In the old iBooks, the page turned automatically to continue the selection. In the new UI, this doesn't happen, so I thought this feature was gone.

However, if you pull the selection to the boundary of the page and then turn the page manually, the selection remains, allowing you to adjust it and highlight or copy the text.
