iTunes Preferences is supposed to let you select a media folder when subsequent downloads, rips, and conversions go. You can also get it to copy (not move) any current content to the new location. Sadly however this setting doesn't always stick, which can result in files being split across the new location and the default path. A better approach is to move the library that you have to the external drive, e.g. by moving your iTunes folder from the Music folder in your user profile to the external drive so it becomes <External>\iTunes, then hold down Shift while starting iTunes and use the option to choose a new library to select the iTunes Library.itl file from its new location.
