Seems that quite a few apps default to Google Maps for directions/locations. I would like to default all apps to Apple Maps. Is there a default setting somewhere to do this?

After getting into the App Store from clicking more extensions, you will to purchase a map director. There are 2 i have found, screenshots attached, that you can purchase, but no free ones, typical apple. Hope this helps 👍🏼

I've never been inclined to do this, but I would tap More Extensions.
That takes me to the App Store.
