Odds are your bluetooth device was connected to your previous phone. Here is what I did to correct this problem.
On your old phone, go to it's settings and go to bluetooth and disconnect the device or forget the device.
Consult the owners manual of the device you're trying to connect, or look it up on the internet to get the instructions for that device to pair with bluetooth.
Follow the instructions on how to pair that specific device. Some want you to have your iPhone X turned on and searching for bluetooth devices, and some do not, so follow that manufacturers directions as if it is a brand new device that has not been paired yet.
This worked for me, and all is good in my iPhone X world now.
11.2 came out this morning. Try updating to it.
I had a similar issue. If you iPhone X has the same name as the 7, try changing it. As strange as that sounds,that’s all it took for mine.
After the update, did you reboot your phone?
The same issues I’m having. Apple Watch and Bluetooth earpiece ( jawbone stealth ) causing poor call quality. The issue is the firmware. The 11.2 beta addresses those bugs. We should Beijing once the new update it pushed
My iPhone X is working flawlessly through my 2016 C Class. Did you have your E forget the previous device before you paired i?. Also and I'm not sure why, but make sure it has a different name than the iPhone 7 had. Settings > General > About > Name.
This does not appear to be a universal problem. I'm not having any issues whatsoever with Bluetooth connectivity on my iPhone X. I also know several others with iPhone X who are having none of the issues you and the others who have posted here are having. Given this does not appear to be a universal issue, I wouldn't sit back and wait for an iOS update. Instead, I would make an appointment at your Apple Store Genius Bar and have them run diagnostics on your phone.
Same issues with my AirPods. Drop out one side only then dropped connection. Tried the forget this devise method and repaired, issues continued. Did a soft reset, then a connect to in Bluetooth, and then used the control center and selected and my AirPods manually, Its now seems to be working fine, volume improved, clarity improve, and it is not dropping connection.
When the iPhone X drops the connection, try going into the control center (swipe down from upper right side). In the music section (upper right side of control center) select the very corner BT symbol, and select the car or the iPhone here. Been having similar issues in my Toyota the initial drop and I do the manual select it stays on.
First part - mostly yes, doing a full reset using iTunes to restore the OS and setting up as new has it working almost as well as my 'old' 7Plus. I generally have it plugged into the PCM using USB so the audio quality there is fine. I do, however, notice some noise on Bluetooth with Calls and when Waze breaks in to do an announcement. I haven't tried playing audio using BT only - will try that on my next drive and let you know.
If you have updated to iOS 11.2 and tried all the other suggestions listed by Apple and in this thread and it still is not working then you need to contact AppleCare and give them all of the details of the device you are not able to connect with. Besides the new iOS the iPhone X (and iPhone 8/8 Plus) has a new Bluetooth chipset with Bluetooth 5.2. There is no way Broadcom or Apple can test with every BT device that exists so you need to contact them so they can get information from your iPhone and about your device.

YOU are not alone. I had similar problems, jumped through all of the hoops, and nothing worked until an iOS update resolved most of my Bluetooth issues. The Bluetooth protocol in the iPhone X differs from previous model so Apple is still fixing problems as they encounter the various devices that do not work with it. I expect more iOS updates before it is fully sorted.
Replacing your phone might not work so set your expectations accordingly. (We are using Apple's publicly released bleeding edge technology which occasionally gets painful.)
try going to control center, turn off blue tooth, then wait a few minuets and turn back on. If you are showing a connection and paring, in control center under the music setting if you are connected you will see a fan symbol in the upper right concer of the music section, select and you should see the different paths for the audio, select either your phone or the named radio. This worked for me with Waze and with maps. It allowed me to listen radio and receive phone calls and switch off to BT audio for phone and then switch back to the phone for Waze. However since the Bluetooth protocol for TomTom is different, tomtom did not switch back to iPhone after the call. Therefore it’s my believe that the issue lies with TomTom not the phone. It like selecting the audio output from the maps app directly.
And it is still there after updating to iOS 11.2, deleting all previous pairings on your head unit and iPhone, then pairing them again?
I also have issues. Bose speaker showed connected but music would not come through. Saw the suggestion to change the phone name and that worked. Will see how it does on other devices.
Were you daughters iPhone's within range and on when you tried to connect your X to the Bose Headphones? If the Bose were connected to one of their phones, it would not connect to another phone at the same time. Try again, but this time make sure either of their phones are either off or certainly not within range of your iPhone.
