Odds are your bluetooth device was connected to your previous phone. Here is what I did to correct this problem.
On your old phone, go to it's settings and go to bluetooth and disconnect the device or forget the device.
Consult the owners manual of the device you're trying to connect, or look it up on the internet to get the instructions for that device to pair with bluetooth.
Follow the instructions on how to pair that specific device. Some want you to have your iPhone X turned on and searching for bluetooth devices, and some do not, so follow that manufacturers directions as if it is a brand new device that has not been paired yet.
This worked for me, and all is good in my iPhone X world now.
I have been working with the Apple team testing the iPhone X and trouble shooting. I have sent my logs for it to be reviewed.
While we were testing we found the following worked.
In your car forget all Bluetooth devices. ALL.
on your iPhone make sure you change the name to anything other than “iPhone” or the old name that was paired to the car.
Pair the device back to the car. And all works great now.

As I mentioned above: With a replacement iPhone X all issues disappeared. I only experience just some tiny dropouts when listening to music with my AirPods but everything else works fine now. There seem to be some faulty devices...
I've been working with Apple Support on a variety of tests.. Something that I've been trying to avoid at all cost seems to have made a significant improvement - but I'm still testing - only did this yesterday afternoon. I've driven about 2 hours so far and it has disconnected 3 times - very early in the testing. Perhaps it has to do with a 'sync' process as I have a large contact list (over 3k) and Automatic had to sync for a couple weeks of driving.
The 'fix' was to do a full restore using iTunes (to reload the full OS and not just patch). And to setup the phone as New - which is the painful part. Especially since I routinely use VSSH and it is not longer in the app store...
As I said, I still need to do a lot more testing - but the difference is night and day.
What you are suggesting will never happen. Apple doesn't publicly comment on minor issues. While those of you who are having Bluetooth issues would not agree this is a minor issue and justifiably so, this forum is hardly representative of the vast majority of the millions upon millions of iPhone X users who are not having any issues and aren't on this or for that matter any forum. They're just out using and enjoying their phones.
What the poster above you did was the best thing he could do. He wiped his phone to factory settings and is now not having Bluetooth issues. That demonstrates the phone is not defective, but whatever he carried over from his backup was causing an issue when he set up his phone. The best thing any of you who are having an issue can do is to follow his example and see if your backup was causing the issue.
Schedule an appointment at your Apple Store Genius Bar. Neither of our 2 iPhone X have any disconnect issues with either of our Mercedes cars. Two other friends with Mercedes and iPhone X have no issues either. So it's not Mercedes head units that are likely causing your issue. Let Apple run diagnostics on your phone.
The latest 11.2 iOS update may have fixed my phone audio Bluetooth issues. That is the only thing I changed on my end and so far so good.
The audio selection on the phone now showed my iPad and Bluetooth device as options and that is a good sign. I did not have to select the Bluetooth device as it automatically used it for audio. Hopefully, it is fully resolved as a result of the update. We’ll see.
Are you one 11.2.1? If not update then go to Settings > General > Reset > Reset Network Settings, delete any pairings from your car and try again.
If that doesn't work check the Subaru site and see if there are any firmware updates for your head unit.
If it still doesn't work contact AppleCare and give them information regarding your car's head unit and the current firmware.
If you are near a store and you can get to that store before the store opens say about 30 to 20 minuets prior you can try a walk in. You might have to wait a little but you can be scene. Another alternate method is to go to the Apple store and download the Apple support app. It will set itself up automatically. Open the app and navigate to your device and choose a problem similar to what you are having. You then can have an Apple tech call you at a predetermined time or right now. They will send you a notice to acknowledge you time. They are very good at doing it on time. They also are very good in doing it ASAP if that is What you requested. They can assist you as well as run some diagnostics over your phone. I take it you have deleted all the current Bluetooth devices on your phone as well as in your vehicle and tried to reset up from scratch.

After having many problems I went to Apple store and was giving a new phone which seems to have fixed the problems.
The chances of getting two phones with defective Bluetooth radios is extremely small. Please tell us what you're trying to pair and exactly how you are trying to do so.
My issues were solved with the 11.2 software.
All problems solved with the latest update.
If this happends reset all settings then turn your Bluetooth headphones on then hold the power button for 5-10 seconds then it should be fixed
