Odds are your bluetooth device was connected to your previous phone. Here is what I did to correct this problem.
On your old phone, go to it's settings and go to bluetooth and disconnect the device or forget the device.
Consult the owners manual of the device you're trying to connect, or look it up on the internet to get the instructions for that device to pair with bluetooth.
Follow the instructions on how to pair that specific device. Some want you to have your iPhone X turned on and searching for bluetooth devices, and some do not, so follow that manufacturers directions as if it is a brand new device that has not been paired yet.
This worked for me, and all is good in my iPhone X world now.
You should also reset settings, make sure the phone is deleted from the car's memory and then pair it again.
If I’m listening to Spotify and then take a call my Bluetooth will not reconnect unless I power down my phone. Pretty pathetic.
Got a replacement iPhone X . No more issues
i set up the complete new system without any of my old back up.
for one day i am fine now, maybe it was some confusuion withe the mercedes ME adapter running in the car.

Try selecting the iPhone or the radio in the BT settings from control center
Please report this to Apple, we need to higher the pressure about this issue.
Tested with other iPhone X devices with the same BT devices, issue remains.
These BT devices has worked from iPhone 5s to iPhone 7 Plus, this issue has occurred with iPhone X and iOS 11
Make sure you delete both the association between your phone and your car as well as any phones from the car's interface, then reassociate.
I have reset all settings, restored from backup, full factory reset and although I can get 1-2hrs of Bluetooth devices connecting properly ultimately they stop working but only for making calls.
The issue has evolved so that if I am using my headphones for music and a call comes in and I select - iphone for the audio they can't hear me through the phone mic or headphones. I have to switch the headphones off to answer calls.
Same issue for Bluetooth in the car (Ford). I have spent hours trying to fix this and ultimately apple support have told me to have a genius bar appointment, or get a replacement phone from my provider (which there is no stock available so not possible).
I am on OS 11.1 and headphones are Beat X. I have not tried connecting via Carplay yet - as I fear this will do the same.
Tried that (which is a royal pain) and the problem persists. Keeps on dropping and reconnecting.
I also tried it outside of my case and it still drops.
And noticed it my Apple Watch also dropped and reconnected - just not as frequently as the car.
iPhone x and bluetooth Bose Revolve speakers give many audio dropouts and sometimes just stops playing. so unusable...so have gone back to iPhone SE using exact same apps plays 95% no probs...always few dropouts.
Same negative experience using Bose Soundlink mini 2 with iPhone x.
Lets hope quick solution to this...oh and also the iphone se screen freeze on power up that ios11 introduced.
Actually I had already installed 11.1.1 and was still experiencing inconsistencies with Bluetooth across all my multiple Bluetooth devices Airpods, b&o H5 and b&o H8. Sometimes it would stay stuck with one device and not move to the other one even though the choice was clearly available. I end up using multiple devices while traveling to optimize for over ear, noise cancelling and battery life.
Same hier got my Iphone X just a few days a go, on ios 11.11 no bluethooth functionality. Doesn't discovery any devices, no connect to my skullcandy headset or car (Volvo V60). Hoping for quick update! 😟ðŸ˜

I am having the same issue with Acura Handsfreelink
It will disconnect and reconnect.
Very annoying. Seems to do it more when I start car. Tried re pairing.
Do do you have an Apple Watch. I am trying to narrow down why this does this. Never had an issue like this.
I dont recall an issue with my 7... this seemed to start with iPhone X... so maybe it is not just an ios 11 issue... It definitely was not an issue with ios 11.
I also get the music stopping when connected with USB to car (using acura built in USB plug). It stops and I have to keep restarting it.
No issues before
