After updating to "Hi Sierra", Canon informs me that they no longer provide a driver for this model printer. It prints perfectly and scans documents just right so there is no need at all to get rid of it.
Is there a work around out there that will allow me to keep using this printer or am I forced to add it the global pollution problem that is "Technology"???

The Canon PIXMA MX870 Series is shown as a supported printer in the 2017-07-06 Canon Printer Drivers v3.4 for OS X.
There are two alternative approaches (try these in order):
System Preferences : Printers & Scanners
When done with either above, right-click on the MX870 printer entry and choose Set default printer.

I did the first one and have ended up with two drivers in the dialog. I changed the default to the other one and its working now. Version 16.10.0.0
Both had the same version. One had Canon_MX870_series (now default) the other (ex-default) has what looks like an ip address in brackets after it and shows its constantly in use.
