Using iTunes to Re-Order/Organize Apps on iPhones

In the past, we could, easily, organize apps on our iPhones using iTunes.

This features seems to have disappeared; and now we're left with the much harder and unsatisfactory process of having to do it all with our fingers on the tiny iPhone screens -- instead of being able to do it on our Macs.

Why is this?

Is there another way to use our Macs to re-organize the apps on our iPhones and iPads?
