I have a new mac mini 2018. Love it! I have to LG displays connected via USB C. I want to get audio out to my receiver from the HDMI but without video. I don't want a third monitor to appear to the mac. Is there any way to just get the audio out of the HDMI? I wanted to get optical out (TOSLINK) but its no longer on the 2018 mac mini (as you know)...

Only Audio filtering from HDMI is not possible.
Alternatively you may choose to use audio through bluetooth connectivity or headphone jack.
Try the one which I have bought few years back may be better ones available now.
Do your LG displays have an Audio connector on them? USB-c/Thunderbolt supports audio and video (its a DP standard). I just have speakers plugged into the back of one of my Dell 27” monitors and those speakers get their audio over the monitors DP-to-USA-c cable connection.
