Change the voice. The Uh-Huh seems to be associated with the South American Female voice option.
For instance the American Male has proper, respectful, intelligent sounding replies. I’m sure others do as well, you’d just have to try out different ones.
Or just don't wait between "Hey, Siri" and your question. Siri only says that if you pause. So, no pause, no uh-huh.
It seems like Siri used to respond in a variety of ways. Sometimes “Yes, <name>” or “How can I help you?” I would be ok with “Uh huh” if it was part of a random selection of responses, just don’t like hearing it every time. I try not to pause in between now, but it’s a hard habit to break. I just don’t understand why Apple would take functionality away after a software upgrade.

Siri used to beep after you said "Hey, Siri...". You had to wait until the beep or Siri wouldn't recognize what you said. I believe it still does that on older phones with less powerful processors. However, newer phones have powerful enough processors that there's not need to wait.
Many times in the past I have used “HEY SIRI “ just to find my phone I had misplaced around my house. Going from room to room yelling “HEY SIRI “ until I find it. Lol
But now you can barely hear it. Hope I don’t miss place it in the future.

Next time, “Hey Siri, where’s my iPhone?”
What can I ask Siri? - Official Apple Support
No pause, obviously.
Ok, I don't need to pause, but I miss the old Siri, he was friendly. :)
I also noticed this on my iPhone 11 but my sons don’t have this issue with there XR.
Exactly!
At Apple feedback which subject did you choose? I did not see a specific topic for Siri? Just wondering which would be best. Tx
I like the uh-huh. Sounds pretty awesome. It’s doing it in my wife’s but not on mine. Like it but just can’t find where to turn this on. Much more human like. Apple please keep this
I agree. A choice is best.
(I will choose no uh-huh -- but I'd want you to have it if you want
I feel the same. Smack him for me too.
I'm with you. Drives me nuts.
That's funny!
And I agree - it's like she's annoyed but superficially nice. Sounds condescending!
mine says different things time to time like hummm
This morning Siri said when I accidentally press the side button, “what did you want to ask” and I said “I wasn’t talking to you”. Siri said “sigh"
