What is this new response I get when I say Siri? she says uhhuh instead of yes? I have iPhone 11 Pro Max I really don’t like response and want to change it.

That’s because no one taught you to speak English properly. “Uh huh” is a rude and dismissive expression and if you family members spoke to you that way it was unfortunate. We should not encourage anyone to think that is normal and acceptable speech.
What’s the deal with Siri? An attitude problem? I’m paying good money and I get a very informal and disrespectful Siri. I don’t like it at all and Siri needs an attitude adjustment. Answer with a little professionalism.
As has been noted here many many times... you are not grumbling to Apple here.
Nobody here has the ability to help you with your concerns.

You never have to hear "uh huh" if you don't pause between "Hey, Siri...." and the rest of your question.
Calling Apiple Support would be rather a waste of your time and theirs. Siri is working as designed. If you want to let Apple know you don't like how they designed it, use the feedback page:
Put your feedback under the general iPhone category as Siri is built in.

Well, that seems okay as Siri is not "intelligent". It's a computer program that could never pass the Turning test.
If the purpose of "uhhuh" is to indicate that Siri has heard you say "Hey Siri" and is waiting for you to speak then why not say that instead of grunting.

Hello ~ I will tell you what I did to make it at least bearable… Settings * Siri and Search * Language and there I selected a different English (United Kingdom) as that accent to my ear is the least creepy and offensive…. Other than that… Product Feedback - Apple…on a lighter note..while correcting my youngest grandchild while they were saying uhhhuuh…his response “ that’s what Siri says!!!”😳

Hello ~This has turned out to be one of my pet peeves now…maybe if we leave enough feedback they will do something about it. It drives me to distraction and it is indeed aggravating.

I've given the "actual solution" probably a dozen times in this thread (at least) and other people have given it too. But, one more time. Do not leave a pause between "Hey, Siri..." and your request. Say it all at one go. E.g., "Hey, Siri, what time is it?"

This is also not a recent update. I believe it's been this way since at least the release of the iPhone 11, possibly earlier. You just wouldn't have noticed it if you had an older, slower phone.

But, unlike Siri, they don't say "Uh huh" when you submit feedback. They explicitly state they won't answer you at all (though they they do read your concerns).
As far as I remember, Siri never responded "How can I help you", at least not on my HomePods in the last couple of years.
Using the Feedback Link is the only way to let Apple know about your thoughts related to this zeitgeist feature.
