Change the voice. The Uh-Huh seems to be associated with the South American Female voice option.
For instance the American Male has proper, respectful, intelligent sounding replies. I’m sure others do as well, you’d just have to try out different ones.
Or just don't wait between "Hey, Siri" and your question. Siri only says that if you pause. So, no pause, no uh-huh.
That’s because no one taught you to speak English properly. “Uh huh” is a rude and dismissive expression and if you family members spoke to you that way it was unfortunate. We should not encourage anyone to think that is normal and acceptable speech.
I agree! I imagine a socially crippled, snot-nosed software engineer who hasn’t had a date in years came up with that bad idea. Why can’t Siri be more like “Janet” in “The Good Place”? Polite, attentive and slightly formal like a really smart waitress in a very nice restaurant?
Ever since i moved to the iPhone 11I have had all kinds of issues with Siri.
Her attitude, not completing the easiest of commands and Siri says “Uh huh” instead of yes.
It's really annoying, rude and in extremely disrespectful.
Come on Apple this is unacceptable!
I don't think it has anything to do with respect, its a machine. It's ANNOYING and UNPRODUCTIVE, to say "Hey Siri", hear silence, start talking, then have it finally say "Uh huh" over you... now you stop, and you aren't sure if its heard what you said, then you start talking again, and are interrupted again with "Yes?"
The only cure currently is to say "hey Siri'' and force yourself to ignore "uh huh?", and just keep talking... but that is very unnatural way to "talk" to the phone... and a pain in the butt when you are not FOCUSED on ignoring the phone (which you typically DO NOT want to do by design) because your natural response is to stop and listen when you hear "uh huh?"
This isn't rocket science... JUST GIVE US AN ON/OFF SETTING FOR THE INITIAL SIRI "UH HUH?" OR "YES"... I mean c;'mon... that could easily be added to the next update.

just force of conversational habit to wait before continuing. I did send this end to apple, what is really odd, along the same lines as your suggestion, i found if i say "hey Siri" 2 times in a row, then i get the most proper reply one could hope fore. So "Hey Siri, HeySiri" and i get good morning or what ever is correct, How may i help you or something along those lines and i actually enjoy this manufactured dialog.
I do wish Apple would add some kind of adjustment to the length of time Siei listens.
I use the Irish Female voice and when I just say Hey, Siri and pause I do get the "uh huh" response but she always sounds cheery to me when she says it. Maybe it is from my employment background and from being around a lot of younger people but it never dawned on me to be offended by the response. And the "I'm on it" sounds active to me, and not snarky, as a know it is just a place holder to show there is a delay.
I think the problem with these responses lies with the people hearing them and not the computer voice. It always sounds the same. Your mood may be different. I believe it also has to do with the Old Fogeyness Scale (OFS). If you are high up on that scale it is going to bother you like kids playing on your lawn, wearing the jeans slung low, wearing hats indoors, and using your first name. Apple has done extensive marketing research, like makers of music, television shows, movies, video games and ski boards, and have set their marketing to an OFS of between 18 - 45 because by far the largest percentage of their market is in this area. So you can either adjust your OFS (which is possible) or look for a company marketing to the OFS 80-100 range.

My iPhone doesn't do this. With my iPhone, a brief tone is played that tells you that Siri hears you and is ready to respond. Apparently only Mac users get the pleasure of having Siri say uh-huh to them.
Older phones like the iphone 7 do not do the uh-huh. You need a top end iphone to be offended
Hey Apple! Please get rid of the uh-huh with the next update.
Apple do not read this forum. Put in a Feature request to Apple
Siri saying "uh-huh" and "I'm working on it", are part of Apple having much younger employees and marketing to a much younger crowd. They are definitely not shooting for the septuagenarian market or people with an Old Fogey Scale (OFS) rating of 60 or higher. It really doesn't bother me and when I did a stratified survey at my laboratory, AKA Roots Coffeehouse the problem I ran into with the 15 - 30 crowd is that they had never actually heard any of their Apple devices do that as they don't say "Hey, Siri" and wait, they just go right on with the question or instructions. Once they tried it they thought it was fine and didn't bother them at all. Several suggested that old folks need to move on to the Jitterbug.
You can send Feedback to Apple but with iOS 15 it should be about time for them to shuffle everything around so maybe she will move on to "wassup"?

My new iPhoneSE(2020) does not do this. It is my new MacBook Air purchased just this month that does this. Why would Apple have two different Siri responses depending on what Apple product one is using?
It depends on how fast the device can process the request. Older phones, like the iPhone 6S or 7 take a moment to register "Hey, Siri..." so you need to wait. Newer, more powerful phones can process that almost instantly. Features vary depending on the capabilities of the hardware.
I'm sure they have been waiting with suspense since September 28, 2020 for you to announce this.
As far as sending feedback on this since you are in the iPhone forum you would go here -> Feedback - iPhone - Apple
Then wait until iOS 14.5 is released and see if they changed it.

It is annoying that Siri interrupts with oh uh or hmm when you are talking
they need to do better than this
Siri doesn't "interrupt" you do to that. It only says it if you pause for too long. Simple solution: don't pause for too long.

I totally agree. It’s highly annoying. Even more so is the inability to change it. Some people may enjoy the casual “uh huh” and “mm hmm” but I find it be an irritant.
It's a good thing, then, that it's so easy to avoid.

Siri randomly says "uhhuh" on my iPhone 11 without me saying "Hey Siri".
That would seem to indicate that the phone is recognizing something picked up by its microphone as "Hey, Siri..."
Saying "uhhuh" serves no functional purpose and unfortunately perpetuates the stereotype that Siri is unintelligent.
Well, that seems okay as Siri is not "intelligent". It's a computer program that could never pass the Turning test.
If the purpose of "uhhuh" is to indicate that Siri has heard you say "Hey Siri" and is waiting for you to speak then why not say that instead of grunting.
