You could wait for Apple to release a new build, but reading around it seems that if you have your iPhone connected and unlocked and reinstall iTunes 12.8 then your Mac may offer to install an additional update to work with the iOS 12 device.

iTunes 12.6.5.3 was released at the same time as iOS 12. It can be downloaded from Deploy apps in a business environment with iTunes - Apple Support. Are you saying it isn't strictly necessary to switch up to it from 12.6.4.3? Perhaps it is the same thing that lets some iTunes 12.8 users connect to iOS 12 while others don't seem to be able to. I.e. a bonus software download that isn't always happening when it ought to.

I have the same problem with my iPad running IOS12. When connecting I'm asked do download software but when I try I get a message the software isn't available on the server. I contacted apple support and was told I have to wait and upgrade to Mojave tomorrow which contains an updated iTunes. Although I can upgrade my machine I wasn't planning to until, at least, the first service update was released. Also not much help for those machines that can't be updated.

What worked for me is to install iOS 12.6.5, then when I tried to open it, it said it could't because there was a file that was installed by a newer version of iTunes (12.8). After I reinstalled 12.8, it recognized my iPod and everything is good. I thought my old hardware was finally hitting a dead end. (mid 2009 Macbook Pro)

It does rather look that way. 😟

iTunes.
Now included in macOS Mojave.

The latest version of iTunes now comes installed with macOS Mojave. Upgrade today to get your favorite music, movies, TV shows, and podcasts. iTunes is also where you can join Apple Music and stream — or download and play offline — over 50 million songs, ad‑free.

You can always download iTunes 12.8 for previous versions of macOS, as well as the application for Windows.

Not entirely encouraging. 😕

Unfortunately I tried customer support when I couldn’t connect to 11.8 after upgrade iPad to IOS12. They were useless. Their solution was to wait and upgrade to Mojave as it contained iTunes 11.9 When that didn’t work and I contacted them again Their solution was to reinstall iTunes 11.8 but this not possible if you have upgraded to Mojave. Anyway it wouldn’t connect to 11.8 the first time.

Being a die hard Mac fan I’m ashamed to have to admit that I eventually had to use a windows machine to restore the firmware on my iPad. It reset it to a factory new machine with everything wiped.

Now the Mac sees the iPad and I have eventually been able to restore my last back up.

A bit ridiculous that I had to use a windows computer to do it.

I can only speak for the iPhone 8 and 6S, but 12.6.4.3 works just as it

always has before iOS 12 and wasn't aware of the 12.6.5.3 update.

I did the iOS upgrade on the iPhone 8 on a different machine running

iTunes 12.8 and got the software update message if that means anything.

The phone also reconnected to that machine after the iOS upgrade and

the software update.

Why Apple would release a 12.9 version for Windows but not for Mac is

kind of puzzling. Also, waiting for Mojave to be released doesn't make

a lot of sense either if 12.9 is supposed to be used by earlier macOS

versions. But, I guess they have their reasons.

This has been mind boggling how this has been handled by Apple. First, I was assured when I called Apple multiple times that itunes 12.8 has IOS 12 support even though that I pointed out that itunes 12.8 never claimed to have it. (I also mentioned itunes 12.9 for Windows was released with IOS 12 support and nothing has come out so far for Mac users with that support.) They still insisted I would have no problems. Thank god I did not listen to those bozos and held off on installing IOS 12.

It makes ZERO sense to release itunes 12.9 with IOS 12 support for Windows users, yet leave people that use Macs in the dark. EVERY other year before this one, Apple has always released an itunes update for BOTH Windows and Macs days before a new IOS was to be released. Why in the world did they not do that this year? How does Apple release IOS 12, yet do not offer the latest itunes 12.9 software that supports it? Why do mac users have to go through this BS just so itunes can maybe or maybe not detect their phones after IOS 12 is installed? Unbelievable how Apple treats their customers and continues to get away with it. This is inexcusable.

iTunes is designed for forward migration of the library. Each new version should be able to read a library created by any older version. If you want to go back to an older version of iTunes you need to restore a suitable copy of the database from backup or the Previous iTunes Libraries folder. See Empty/corrupt iTunes library after upgrade/crash for details. See also Managing apps with iTunes 12.7 or later for more on the legacy 12.6.x builds.
